I think there is a fine line with the Hulk where if you make him too stupid and uncontrollable people don't care for him .

I've never approved of how some portray Hulk as an idiot. If this is to be humour for the kids, why can't they rely on the witty humour Spider-Man delivers? An uncontrollable/raged Hulk is far more enjoyable to watch! 'The Incredible Hulk' or 'The Avengers' for example!
